Cheesey Chicken Enchilada Soup
Follow the basic directions for Aunt Chilada soup and add:
- 1 six ounce can of chicken meat
- 1 cup of grated cheddar cheese
If desired, add a can of pinto beans and top with sour cream.
Burritos Rancheros
- 1 pkg medium sized tortillas
- 1 lb of ground or shredded beef
- 1 can of refried beans
- 1 pkg shredded cheddar
- 1 can green chile salsa
- 1 small onion, diced
- 1 pkg of Aunt Chilada’s Soup Mix – prepared with 3 cups of water
- 8 oz sour cream
Brown meat; mix together with beans, 3/4 of cheese, salsa, and onion. Roll into the tortillas. Arrange in 9/13 pan. Pour enchilada sauce over all. Bake at 325 degrees for 25 minutes. Spread sour cream and top with remaining cheese. Return to oven for 10 minutes.
