Chunky Artichoke Spread
- 1 pkg Uncle Artie’s Artichoke Dip Mix
- 8 oz sour cream
- 8 oz cream cheese, softened
- 1 jar/can of artichokes chopped
Mix all together and refrigerate overnight. Serve with crackers or bagel chips.
Crab Stuffed Mushrooms
- 24 fresh mushrooms, large
- 4 Tbsp butter
- 1 small onion, minced
- 1/4 cup dried bread crumbs
- 1 (6oz) pkg frozen crab, defrosted and drained
- 1 pkg Uncle Artie’s Artichoke Dip Mix
Remove stems from mushrooms; chop stems coarsely and set aside. Melt 2 Tbsp of butter in a large skillet and add onion, saute until soft, then add stems and saute until they excude their liquid. Remove from heat. Stir in remaining butter, bread crumbs, crab, and dip mix. Stuff mixture into mushroom caps. Bake in preheated oven set at 350 degrees for 15 minutes.
